- Great for meal prep! If you head to work early and don’t want to make breakfast that morning, try making these in bulk on Sunday and you won’t have rely on a bar or a yucky McDonald’s drive thru to fuel your day! Ingredients (Makes 5 Servings): • Olive Oil, 2-3 tablespoon • 6 Eggs • 10 Egg Whites • 2 oz. shredded 2% Colby Jack Cheese • Salsa, 1-2 tbsp per bowl • 2-3 large sweet potatoes, peeled and diced • 1 large green pepper, diced • 1 medium white onion, diced • Salt and Pepper to Taste • Optional Toppings: Avocado, Ketchup, Additional protein like turkey sausage or Canandian bacon! Directions: 1. Preheat oven to 425 degrees. Add potatoes, peppers, and onions to a large sheet pan then drizzle with extra virgin olive oil, seasoned salt, and pepper and then toss until evenly coated. Transfer half the vegetables to a second sheet pan then roast both pans for 30-40 minutes, or until potatoes are golden brown and tender, stirring and rotating pans halfway through. 2. Meanwhile, crack eggs into a large bowl then season with salt and pepper and whisk until smooth. Heat a large skillet over medium heat then spray with nonstick spray and add eggs. Scramble until the eggs are just barely cooked through and still slightly glossy then scoop onto a plate and set aside. 3. Divide the potatoes and eggs evenly between the containers then set aside to cool. Once cool, sprinkle with cheese and green onions then cover and refrigerate. Freeze any portions that aren’t eaten within three days. 4.
