- I’ve always loved Christmas Eve just a tiny bit more than Christmas. Is it just me or does everyone feel that way? It’s like the perfect day because it feels like Christmas but it’s still filled with anticipation for tomorrow🎄 • Also, if you’re looking for a great last minute gingerbread recipe, I got this Nordic inspired one from @thefauxmartha. I swapped brown sugar for @nutiva coconut sugar and added two tablespoons of @bushwick_kitchen maple syrup to replace the moisture. I wasn’t sure if it would work, but they came out great! I hope your day is cozy, especially those of you with snow right now who are LIVING THE DREAM 🌨☃️❄️

- I’m calling this Ultimate Hot Chocolate. Not only is it a way more nourishing version than what we all grew up on, it also happens to be way more delicious too. It’s packed with protein and heathy fats for energy and blood sugar stabilization, plus it’s as creamy and chocolatey as you’d hope. Recipe below (per serving)👇🏼 • 12 oz of @thenewbarn unsweetened almond milk • 1 scoop @vitalproteins collagen • 1 tbsp @fourthandheart vanilla bean ghee (you can use unsalted grass fed butter if you don’t have ghee) • 2 tbsp @navitasorganics cacao powder • 1-2 tbsp @nutiva coconut sugar, depending on how sweet you want it to be • Dash of pink Himalayan salt Combine ingredients over low to medium heat until hot, but not boiling. Top with cinnamon, dark chocolate shavings, and a dollop of grass fed whipped cream! (To make whipped cream, just mix a cup of heavy cream on the highest setting with a whisk attachment until fluffy.) Drink while watching Elf or The Family Stone, no work emails allowed. Love you guys!🎄#northoureats

Everything I know of her is from stories, old photos, and a few pieces of art. • This one has always been extra special to me. I remember looking forward to seeing it each year when my mom would unwrap it and display it around Christmas. I’d get lost in the the lines of the buildings, the texture of the snow and the trees... Something about it felt magical, like stepping into a world where she and I existed at the same time. • A few years ago, my mom handed it down to me. I try my best not to attach too much emotion to material things, but this one is an exception. It’s an honor and a responsibility to own and care for something that I’ve loved so dearly for all my life. I thought it might be nice to share it with all of you so it could perhaps bring you some joy too 😊 • What about you? Do you have a most loved holiday decoration? Or most treasured holiday memory? - You guys, these are THE BEST oatmeal chocolate chip cookies in all the land. A few of you asked me for the recipe last time I posted them, plus you’re gonna want to make them for Santa, so here goes👇🏼 • 2 cups all purpose flour • 1 cup @bobsredmill old fashioned oats • 1 cup @kerrygoldusa unsalted butter • 1 cup granulated sugar • 1/2 cup coconut sugar • 1 whole @vitalfarms egg plus one egg yolk • 3/4 tbsp (!) vanilla extract • 1 tsp baking soda • 1 tsp baking powder • 3/4 tsp kosher salt • 2 cups chocolate chips (I like to combine semi sweet and dark) - preheat oven to 325 - cream together butter and sugar, then mix in eggs and vanilla - in a separate bowl, combine all dry ingredients, then add to wet mixture a third at a time - once dough is formed, mix in choc chips - refrigerate for 30 min (don’t skip this step!) then scoop onto parchment lined cookie sheet - for larger cookies, bake 14-16 min or until edges just start to turn golden - enjoy!🎄🍪🥛 #northoureats

- Sunday morning done right 🙌🏼 I’m loving these Japanese sweet potato fries. They’re not as sweet as the orange ones and they get a bit crispier in the oven too. So basically, they’re closer to regular potatoes which is what (my) dreams are made of. I toss them in @chosenfoods avo oil with garlic and dried parsley, roast them at 425 for about 20 min, flipping halfway through, then finish with sea salt. So easy to prep for the week and so good 🍠 #northoureats #weirdbutaccurateemoji

Pay no attention to the cookie in the corner 😆 1 cup PB (or nut butter of your choice) at room temp 2/3 cup @navitasorganics coconut sugar 2/3 cup @bobsredmill gluten free rolled oats 2 large @vitalfarms eggs 1 tsp vanilla bean paste 1/2 tsp baking soda 1/2 tsp cinnamon Preheat oven to 350. Mix all wet ingredients until combined, then stir in dry ingredients. Chill dough in the fridge for about 20 min then roll into tablespoonish sized balls and press them down with a fork. Bake for about 10 min. They'll be veryyyy soft when they come out so allow them to sit for a bit on the baking sheet before transferring to a cooling rack. Once they're fully cooled, melt half a bar (ok, use the whole bar) of @eatingevolved Signature Dark chocolate and drizzle your heart out. These hold up pretty well in the freezer for a couple weeks but don't expect them to last that long 😋#northoureats
