Ingredients 3 tablespoons neat egg 11 tablespoons lukewarm water 1 1/4 cup of sprouted and cooked black beans 1 1/4 cup coconut sugar ¼ coconut oil 1 teaspoon vanilla extract ½ cup cocoa powder ¼ cup buckwheat flour 1 teaspoon ground cinnamon ⅛ teaspoon sea salt ½ teaspoon aluminum free baking powder Instructions Preheat your oven to 350ºF and grease a baking dish. In a small bowl, whisk together the neat egg and water, and let sit for a few minutes. In a blender or food processor, puree the black beans, sugar, oil, vanilla and prepared vegan egg mixture until smooth. Transfer the bean mixture into a big mixing bowl and add the cocoa powder, buckwheat flour, cinnamon and salt. Mix until just combined. Pour the batter into your prepared baking dish and level level out. Bake for 30-40 minutes, or until the sides pull away from the sides of the pan. - Kumara Nachos There's a ton of recipes for sweet potato nachos online, but this recipe from Sanitarium is a good one. I roughly follow it.... My changes are written below, which include seasoning the sweet potatoes & making a sweet chili salsa. https://www.sanitarium.co.nz/recipes/a-z/kumara-nachos These nachos are awesome with avo on top, but with the ridiculous avo prices at the moment we've been going without. My Mum and Dad actually brought us some avos from a side of the road stall in Kerikeri the other day & I was stoked. I know that's very much an annoying millennial type thing to say, but it's true! Makes 2 large serves Ingredients: * 2-6 yellow or orange kumara (more or less, as they can vary in size) * 1 tsp olive oil * 1/2 tsp smoked paprika * 3 cloves garlic, finely diced * Salt + pepper * 1 capsicum, diced * 1 can of sweet corn, drained & rinsed * 1 can black beans, drained & rinsed * 1/2 cup grated vegan cheddar * 1 small avo Sweet Chili Salsa: * 1 punnet of cherry tomatoes, chopped * 1/2 red onion, diced * 3 Tbsps sweet chili sauce * Juice of half a lime * 2 Tbsps fresh chopped corriander * Sprinkle of salt + pepper Instructions: * Line a baking tray or two with baking paper & preheat your oven to 200C/390F. * Peel & cut kumara into small slices. Place in a bowl, pour in tsp of olive oil, garlic, smoked paprika & salt + pepper & mix well. * Place kumara slices on your baking trays, making sure they're not touching each other. Bake for 20-25mins until cooked & browned. * While kumara is cooking, prep other ingredients & make salsa. Add all salsa ingredients to a small bowl & use a fork to mix. * Once cooked, place kumara slices on two plates. Sprinkle with corn, capsicum, black beans & cheese. I don't use all of the corn & black beans, but if you're hungry, use the whole lot. * Place back in the oven, but this time under the grill.
