- As promised, here's the first of some fiscally friendly meal ideas that don't taste like resentment, deprivation and misery, starting with a good ole $8 pack of beef mince turned into bun-free burgers. Mince is cheap, but it doesn't have to be dirty. For a start, buy the premium stuff. Yes, it's more expensive at the outset but you're buying more meat and less fat that will just end up being cooked off so it's actually better value for money overall. All up, 500 grams of mince was enough to make four of us dinner with leftovers for lunch the next day. I padded the patties out by mixing through a couple of finely grated zucchini. It’s not that I need to hide veggies from the Doc and I, we're both big enough to eat our greens but it does make the meat go further and ups the overall veg load of the meal. Same goes if you're making a lasagne or bolognese, chuck in a fucktonne of finely chopped veg (zucchini, carrot, capsicum, eggplant, broccoli, tomato, spinach, kale - anything goes) and you'll double the size of your meat and get a big fuck-yeah fist bump from your bowel for all that extra happy-crappy fibre. The kids meat was portioned off before I got all wild jazzing ours up with tasty stuff like onion, garlic, capers, mustard, smoked paprika, and stuffing in a few cheeky feta chunks - lotsa flavour for little dolla dolla bill from that salty good cheese. I swapped out traditional buns for baked eggplant slices (still a low-carb wanker even on a budget) and layered them up with roast capsicum, cos lettuce and cherry tomatoes, but chuck in whatever your fave burger fillings are - cheese, pickles, avo (although that kinda blows the budget meal idea 😂) or a cheeky bit of bacon.
