- #recipe for frangipane tart with rosewater and raspberries: 375g sweet shortcrust pastry (recipe in previous post; for cake flour I always use 1 cup of flour against 2 tbsp of corn starch) 100g butter, softened plus extra for greasing 100g caster sugar 3 eggs 100g ground almonds 10g plain flour (I used 50g initially, that’s too much) 1tsp vanilla extract and 1 tsp of rose water (for cooking) 125g raspberries Icing sugar for dusting. Instructions: Pre-heat the oven to 180°C. Grease the fluted tins or one large 20cm tin. Roll the pastry over a rolling pin, then unroll over the tin. Press the pastry into the tin (it should hang over the edge slightly as it will shrink during blind baking). Chill in the fridge for 20 minutes or longer. Line the pastry case with baking paper and fill with baking beans. Bake blind for 10-15 mins, remove the baking beans, then return to the oven for 3-4 mins. This is indicative. Keep an eye on it. Remove from the oven. Beat the butter and sugar until smooth. Beat in the eggs, one at a time. Fold in the grounded almonds, flour and vanilla and rosewater extracts, and beat for 1 min. Gently fold in the raspberries. Add filling into the pastry case, put on a baking tray and bake for 20-25 mins until golden. Leave to cool in the tin and dust with icing sugar. #london
