- Banana Oat Muffins. Best recipe ever. 🍌 I made a giant batch (24 normal sized muffins and 18 mini muffins) but you can cut this recipe in half if you're not freezer stashing like me. - 5 cups GF rolled oats (blend 3 of those cups to make oat flour - leave 2 of the cups as full rolled oats) - 6 medium sized ripe bananas - 4 eggs - 1.5 cups unsweetened almond milk - 2/3 cup honey - 1/4 cup melted coconut oil - 2/3 cup flax meal/chia seed combo - 2 tbsp cinnamon - 4 tsp baking powder - 1 tsp baking soda - 1 tsp salt Preheat oven to 325. Coat muffin tin(s) with cooking spray. 1) Blend ripe bananas in mixer, then add in eggs, honey, almond milk and melted coconut oil. 2) In separate bowl, combine blended oats, full oats, flax/chia, cinnamon, baking soda, baking powder and salt. 3) Turn kitchen mixer back on and slowly pour the dry mixture into the wet mixture. 4) Once fully combined, let mixture sit for 5 minutes, then pour batter into greased muffin tins. 5) Bake at 325 for 20-23m (or until toothpick comes out clean). *Mini muffins took about 12-14min* 6) Let sit for 10-15m before devouring.
