- Rice Bowl: White jasmine rice topped with sautéed eggplants, sweet potatoes, and a drizzle of sriracha! •Rice → Boil 1 cup of rice with 1 ½ cup of water and a teaspoon of salt. Once boiled reduce to simmer and let it sit for 15 minutes. 🍚 •Eggplant → cut eggplants into cubes and sauté on a pan on medium heat with olive oil, chili flakes, himalayan sea salt, and pepper until fully cooked. 🍆 •Sweet potato → cut into small cubes and sauté on a pan with olive oil and paprika until soft and crispy. 🍠

In this curry specifically we put chickpeas, cauliflower, broccoli, zucchini, onions, mushrooms, celery, boc-choy, spinach, curry powder, turmeric, cumin, himalayan sea salt, pepper, water, and coconut milk. We first sautéed the vegetables and then added the water and coconut milk. Once brought to a boil, we reduced the heat and let it simmer for about 30-45 minutes until all the vegetables were fully cooked and the stew was nice and thick! Every time we make this recipe we use different vegetables depending on what we have on hand :)

- Tofu Scramble Breakfast Sandwiches: on a vegan baguette we put a layer of spicy mayo, tofu scramble, sautéed vegetables, nutritional yeast, & daiya cheddar style shreds! •Tofu Scramble: we started by sautéing onion, peppers, and tomatoes in olive oil. Once they started softening up and getting a slight brown color we crumbled in firm tofu. We added more olive oil and waited until it started getting a bit crispy and then added nutritional yeast, himalayan pink salt, pepper, cumin, turmeric, and pinch of hot paprika. Lastly, we added some spinach and then stirred it all together until everything was fully cooked and combined well. •Spicy Mayo: we combined vegan mayo with paprika and pepper and stirred until everything was mixed well (you can also add sriracha for an extra kick!) 🌶 •Sautéed vegetables: in olive oil, we sautéed mushroom and onions. Once onions got caramelized and mushrooms were fully cooked, we seasoned it with himalayan pink salt and pepper. Finally, we assembled all the ingredients in the sandwich and were able to enjoy! 😋
