- Spinach Salad and Vegan Banana Bread-muffin Banana Bread - a winner! Ingredients: - 3 or 4 ripe bananas - 1/2 cup oat flour (simply add oats to your blender and pulse until fine flour forms) - 1/2 cup conventional flour - 1 tsp baking soda - 3 tsp cinnamon powder - 1 pinch of a salt - a very small amount of vegetable oil - 2 tsp stevia powder (choose a sweetener of you choice: brown sugar, agave syrup, dates syrup, etc) Note: don't add more than 2 tsp of stevia powder! - Flax seed "egg": flax seeds or chia seeds play the role of an egg replacement. Mix 2 tbsp of either with 3 tbsp water and let it sit for 10 min. Helps keep the batter together. Instructions: Mix dry ingredients. Then mush your bananas with the back of a fork until it looks like a baby food. Mix bananas with the oil and the "egg". Add wet ingredients to your dry ingredients. Mix well but don't overwork your batter. The consistency shouldn't be too thick or too runny. Bake under 250 degrees until the top is golden brown and when a knife comes out clean when you poke the center of the muffins. Spinach Salad - simply clean and cut some: spinch, rocket, red and green pepper, tomatoes, cucumber, carrots, and red onions.
