- Growing up I did not eat beets. My Mom did not cook them and I never requested them. Maybe because I only saw them pickled in a jar looking unappetizing. Now I look forward to eating fresh, roasted beets. ⠀ •⠀ Beets are a nutritional powerhouse filled with vitamins, minerals, and antioxidants, or molecules that help prevent certain diseases by fighting off the damage inflicted by free radicals. ⠀ •⠀ The other day a client asked if it was okay to eat beets because he was told this veggie had too much sugar. Boy, I’m happy he asked because I didn’t want him to miss out on the vital nutrients this veggie has to offer. ⠀ 1 cup of beets has about 13 grams of carbs. Less than a carbohydrate serving which equals 15 grams. So no, not a lot of natural sugar.⠀ •⠀ Summer season is salad season. This is a photo of my roasted beet salad with goat cheese.⠀ Here’s how I made this simple and flavorful salad:⠀ ⠀ Ingredients:⠀ 2 small beets⠀ 4 cups mixed salad greens⠀ 1 tablespoon crumbled goat cheese ⠀ 1/4 cup raw almonds ⠀ ⠀ Instructions:⠀ Preheat the oven to 375 degrees. Wrap 2-3 beets in aluminum foil and place on a baking sheet. Roast for 50-60 minutes or until tender. Remove from oven. - Vacation food doesn’t change much from the normal food I eat, I guess the biggest difference is the change in scenery 🙃 . I’m spending a few days in Sedona with my parents and having a fab time! A good mix of work & play! . Meal prep on vacation is also essential because we’re not here to spend hours in the kitchen!! We roasted some tahini chicken on night 1 which was delicious and then got shredded to find it’s way into other meals. I also cooked off some farro and chopped some nice fresh vegetables to have on hand. . Lunch situation 👉🏼farro and spring mix bowl with tahini shredded chicken & a citrus vinaigrette. Happy Monday!

Here's what I share with them.⠀ .⠀ ✔️With carbohydrates, I'm all about the quality and quantity. That means right-size portions of whole grains, fruits, and beans (all quality carbohydrates in my book). What's the right size? For the most part, consider that a serving is about 1/2 cup (or a slice of bread), which is what I usually stick to for most starchy foods. ⠀ .⠀ ✔️I limit foods with refined grains and added sugar, but I don't take an all-or-nothing approach. Compare labels to find foods with lower amounts of added sugars and fewer refined grains.⠀ .⠀ ✔️I'm all about the magic in the middle rather than anything extreme. I know I feel my best and my clothes fit my best when I mostly stick with the quality carbs in the right amounts for me, but there are times when I might choose a totally worth it dessert, a bigger helping of starchy carbs, some French fries, etc. 🍟🍪 That feels sustainable for me, and when you eat in a way that you can maintain, your results last!⠀ .⠀ How do you feel about carbs? - STUDENT RECIPE: Lemon Garlic Hummus 2 lemons, zested and juiced 4 floz tahini, stirred well 3 tbsp extra virgin olive oil 1 1/4 lbs cooked garbanzo beans (10 oz dried beans) 3 tbsp fresh garlic cloves, smashed and rough chopped 1 tsp salt 1 tsp black pepper 1/2 tsp cayenne pepper 2 floz water 2 floz lemon juice, in addition to juice from lemons 2 roasted red peppers Cook, drain and cool the garbanzo beans. Measure and weigh all ingredients into the food processor. (I used a blender, which made it a very fluffy consistency) Blend the ingredients for 1 minute. Stop and scrape down the bowl. Continue blending. Let run for 5 minutes to achieve the proper consistency. Store in an airtight glass container in the refrigerator.
