- Pasta In Tomato Sauce W/ An Indian Twist Boil desired amount of pasta in salted water until al dente or to your choice. Drain, drizzle a bit of olive oil over and keep aside. In the same water boil tomatoes until the skins start to split. Remove, cool and peel the skins off and then chop the pulpy tomatoes and keep aside along with the juice. Chop a handful of mushrooms, olives and around 2 Tbsps of garlic. Put some olive oil in a pan along with the garlic, sprinkle some rosemary n thyme then add the mushrooms and fry a bit, next add the olives, tomatoes, some tomato puree, some coconut milk, a little onion-garlic masala or garam masala along with salt to taste and some fresh basil and allow it to cook on low until you like the flavour adding more of any of the ingredients if needed. Now stir in the pasta and heat thoroughly. Check the seasoning and serve with vegan cheese if you like.
