I don't know the gastronomic science behind it but kimchi tastes remarkably good with cream sauce pasta. The combination is scrumptious max! I discovered this when I was having an Il Picolo ham & mushroom pasta in cream sauce one day and mixed in some kimchi from Parker Korean Restaurant that my children didn't want that came with their bulgogi rice meal. The rest, as they say, is history. ;)
