- #QuinoaStuffedYellowZucchini This dish is beautiful and full of color, fragrance and texture! The #Zucchini is leaned, cut in half, and then hollows of its seeds and a bit of its meat delicately. Then, I salted and peppered it, and brushed it with light olive oil. I placed the two halves in a 400F preheated oven, skins up for 20mins. For the filling... Rinsed a cup of #PeruvianQuinoa #Quínua and brought it up to a boil in a cup plus 3/4c #VegetableBroth, lowered to medium-low covered for about 15mins or until the liquid dries. While this happens, heat up 2T #LiquidCocoOil and toast 2 thinly sliced #GarlicCloves reserving the oil after retiring the garlic to a plate. Toast a handful of #Pinenuts, about a 1/4c. After the #Quinoa is ready and rested for 2mins covered, separate the granules with a fork slowly. Add some salt and pepper. Add the toasted garlic, the pinenuts, the reserved oil, the rind and the juice of one #MeyerLemon, 1/3c chopped #CurleyParsley (tiny), 1/4c ribboned #Basil🍃1/3c #Raisins. After everything is thoroughly mixed, scoop in some of the mix inside the "empty belly# of the zucchini. Sneak it back in the oven under the broiler for 3-5mins, so you get that pretty golden color around the edges.
