Until then, you'll find the recipe for my vegan paleo carrot-coconut-porridge here: - 3 carrots, shredded - 5 tbsp shredded coconut - 2 tbsp chia seeds - 100 ml coconut milk - 1 tbsp coconut oil - cinnamon and vanilla according to your liking - depending on your need for sweetness: honey or coconut sugar - fruit according to your liking Roast the shredded carrots, coconut and chia seeds with cinnamon and vanilla in melted coconut oil. Add coconut milk and simmer for about 2-3 minutes. If you want it creamier, you can add coconut flour. Serve in a bowl, drizzle with honey and add fruit or coconut flakes.
