- Lunch today was soo good! Decided to make @vegbethany's "Thai Peanut Noodle" recipe 😊🙌🏻 I substituted the chow mein noodles for japanese soba noodles (cause obsessed!) and it turned out great! Would definitely recommend to anyone wanting to make a quick and healthy meal 👌🏻 it was so easy! • Thai Peanut Noodles: -some mixed vegetables 🥕cooked in @chosenfoods avacado oil 🥑, soy sauce and garlic -soba noodles mixed with peanut dressing 🥜 (@preschoice organic peanut butter, @braggsacvhealth apple cider vinegar, and soy sauce) • Mixed it all together and added some @manitobaharvest hemp hearts ❤️ . . . . . . .

- FAJITA PIZZA? I can't think of a reason not to. 🤷‍♀️😛 . I have been drooling over everyone's cauli-pizza pics, so I thought I'd try to make my own...yeah. Epic fail. 🙈 Soooo I just used a @bfreefoods chia + quinoa wrap as the "crust" instead 😉 . WHAT WENT DOWN: • @bfreefoods chia + quinoa wrap • homemade "refried kidney beans" (recipe a few posts back) • sautéed fajita chicken (chicken breasts marinated in @chosenfoods avocado oil, fresh lime juice, and homemade taco seasoning, and then diced and sautéed) • sautéed yellow bell pepper (cooked in the same pan as I cooked the chicken to get all the yummy bits 😋) • chopped organic tomatoes + @organicgirl baby spinach • fresh cilantro • a few small dollops of @kitehillfoods plain almond milk "cream cheese" . Spoon some of the beans onto the wrap, leaving a little edge so you can watch for when the crust is done. Top with everything but cilantro; pop into a 400 degree oven for 8-10 min - or until the edges are lightly browned and crisp. Remove and top with fresh cilantro. Cut into slices or just hoover it. I won't judge. 😝 . Night, babes! 🌙 ✌️

I couldn't decide between doing a quinoa fried rice or a cauli fried rice bowl and then it dawned on me that I really didn't have to choose.
