I had a friend ask me yesterday why I use "pasteurized eggs" all the time. So, just to make sure I'm clear on what I'm eating and why, these PASTURED eggs are the only eggs I eat because it means that the chickens were not only free to graze outside, but by eating grass, they ingested significantly higher levels of omega-3 fatty acids than chickens that are fed corn. The omega-3s are what give pastured eggs their deep orange color and their extremely beneficial, healthy fats. Also, cooking with ghee provides additional healthy fats that are stable when heated, unlike vegetable oils that become rancid with heat and any benefit to eating the fat gets destroyed (as well as being toxic). Lastly, more healthy fats in the form of avocado. These fats help keep blood sugar steady throughout the day, moisturize the skin and hair, decrease systemic inflammation and a million other fabulous things. Aaaand...I've already preached about the importance of pre-soaking your beans for proper nutrient absorption and these little guys are presoaked. End rant. Stepping off my soapbox.
