- My calendar pic is spot on this month! I remember years back (I'm talking over a decade!) my sweet friend @thehappilyeva told me that her family didn't have a microwave. I thought they were crazy! 😳How do you get through life without a microwave?🤷🏼‍♀️ Cut to today, where I hardly use mine. In fact, we keep it in the basement and pretty much only use it for popcorn. To tell you the truth, I don't even miss it! ☺️ While it does mean I have to plan a but more in advance for main dishes, it really takes about the same amount of time to stove heat soups and veggies. I get that every family has to work what is best for them. Do I think microwaves are the devil?👹 Nope. Personally, I just like having more of a hands on approach to how my family's food is prepared and the challenge of staying on top of prep time for our meals. Part of nourishing your body is being involved in the process of cooking your food. It can be so hard as busy moms to get a handle on our timing when life is just so crazy but I encourage you to attempt a week of no microwave and see how it feels. - Our meal plan for the week is reflecting my current need for easy comfort - combined with a desire to fit into a party dress soon. Tonight I’m roasting cauliflower. I’ll drizzle it with yoghurt mixed with tahini and harissa - my new favourite dressing. I have half a pomegranate that needs eating so I’ll tumble that over the top. We have some leftover ham from the party yesterday to go alongside it, and some toasted whole meal pitta. I reckon less than 10 minutes of chopping and 5 minutes of finishing off. ❤️Tuesday is the perfect cosy dinner of baked potatoes (microwave them first then they only need 15 minutes to crisp in a hot oven) with homemade baked beans from the freezer and a quick red cabbage and carrot slaw - which I’ll dress with plain yoghurt and Dijon. Grated cheese in the potato before the beans go in to ensure maximum meltage. ❤️Wednesday is a duvet of a meal - fish pie made with smoked haddock and a cream, mustard and herb sauce under garlic mash. I’ll bake extra potatoes on Tuesday to make the mash extra quick.❤️Thursday is the least authentic, but still delish, taco ever - frozen fish fingers stuffed into wraps with avocado, roast sweet potato (I’ll cook them when I do our baked potatoes on Tuesday) and pesto made from rocket, basil, pumpkin seeds and odds and ends of cheese. ❤️Friday we’re out 🥂Saturday will be steak and rosemary wedges with an endive salad in front of the Strictly final. ❤️ I've tagged all my previous weekly meal plans #ystmealplan and you can find the detailed plans and recipes on my site in the blog section.
