- It's beef again tonight from #blueapron. This time, Seared Steak & Fingerling Potatoes with charred onion and butter lettuce salad. We got a NY strip steak for this and it was amazing. The onion was surprisingly wonderful, as was the salad that had a homemade blue cheese dressing and topped with walnuts. The potatoes we fine, bit over salted - my bad. - My basil is coming in really nice. The leaves are getting pretty big so it was time to pick it so that some of the smaller leaves could have a chance to grow. I have to admit that I don't have much of a green thumb, so I just grow a few herbs in large pots in my sunroom. And basil is one of those herbs that I never have just sitting in the fridge every time I want to make a dish that calls for fresh basil. So it's so nice that in the summertime I have it readily available. Pesto is, of course, my go to food for fresh basil. I like to eat it spread in a low-carb lettuce wrap and also drizzled over grilled chicken as a delicious sauce. And when I make pesto I like to use half pine nuts and half walnuts because pine nuts are so very expensive right now. And using half and half of each nut cuts down on the cost. Then what I don't use immediately I put into small freezer safe containers and freeze for another day. But if you do that make sure and put a thin layer of olive oil on top of the pesto before freezing. Pesto 1/4 c. Walnuts 1/4 c. Pine Nuts 3 TBLS Garlic, chopped ( 9 cloves) 5 c. Fresh Basil Leaves, packed tightly 1 tsp Kosher Salt 1 tsp Freshly Ground Black Pepper 1 1/2 c. Extra Virgin Olive Oil 1 c. freshly grated Parmesan Cheese Place all nuts and garlic into a food processor. Process for 30 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour in Olive Oil until pesto is completely pureed.
