- I didn't want to bombard everyone's feed again with a million posts about different vegetarian foods I've been trying, so I combined my more recent ones into this one post. Before I explain each picture however, I do want to explain why I do this. 1) It motivates me to expand my vegetable palate, and explore more creative meals. And 2) to help non-vegetarians, like me, to change their mentality that EVERY meal needs meat or dairy. Because it truly doesn't, and the health benefits of a more plant-based diet exceed that of our typical, privileged Western diet. So here's the food, starting from top left to bottom right: - Vegetable BBQ Kebabs made of mushrooms, zucchini, asparagus, pineapple, tofu, onion, bell pepper, and bbq sauce. With a side of seasoned rice and tomatoe slices. - Vegetable Stir Fry made from the left overs of the Kebabs ingredients, on rice. - Vegetarian Quesadilla, made with meatless crumbles (tastes like beef), onion, jalapeΓ±os, tomatoes, various seasonings, mayo, sriracha, on two tortillas. - Vegetarian burger, which I've posted about before, but this one has a cooked portabella mushroom instead of a store-bought patty. - Vegan spaghetti, but instead of traditional noodles I used Spaghetti Squash "noodles". Oddly enough, I was able to combine Turkish, American, Asian, Mexican, and Italian influenced dishes all into one post!
