- Sweet Potato & Black Bean Burger via @laceybaierβ € Ingredients: 2 large sweet potatoes (to yield 2 cups mashed) 1 cup low sodium black beans, rinsed and drained 1 cup cooked quinoa 3 green onions, sliced 1/2 cup almond meal 1 tsp. ground cumin 1 tsp. paprika 1/2 tsp. sea salt 1/4 tsp. ground black pepper 1/4 tsp. garlic powder For burger: 4 whole wheat buns, 1 avocado (mashed), lettuce, and tomato slices Steps: Preheat oven to 240C. Slice sweet potatoes in half, drizzle with olive oil, and place cut-side down on a baking sheet lined with parchment paper. Bake until tender, about 30-40 minutes, and then set aside to cool. Add the sweet potato flesh to a large mixing bowl and mash half of it. Add black beans and mash half of them for texture as well. Add the quinoa, green onion, almond meal, cumin, paprika, sea salt, pepper, and garlic powder. Mix well and then form into patties. Cook patties in olive oil over medium-high heat in a skillet. Cook for 4-5 minutes until golden brown, then carefully flip over and cook until golden brown on the other side. - πŸƒβ€ Good Evening Darlings... tonights dinner after a very long day (and early start) of back to back meetings πŸ˜ͺ is one of left over veggie bolognese from the other night, with 2.5 servings of quinoa (because i knew one 'portion' would not satisfy me tonight-as im bloody starving; yay for extreme hunger...not); topped with coconut yogurt, herbs and chilli flakes! Feeling very off colour and mentally exhausted with a horrific headache 😷... so in going to keep listening to my body have some fruit juice in case this is my sugar levels dropping again...and REST!! Im learning its ok to admit when your feeling weak (both mentally and physically)...and doing something proactive about it. Self-care is so so important! Love to you all as always β€πŸƒ

Recently I started following @veggiesandvirtue who uses a #loveitlikeitlearningit strategy and it seemed to work well last night. We basically pulled out all our left overs for a kitchen clean out and I grilled some chicken. Quinoa was a "learn it" for the girls and surprising they both said they liked it.... for two bites ☺️. . . . #familytime #quinoa #wholegrain #dinner #kidsmeal #kidsinthekitchen #produce #healthyfamily #foodhacksforkiddos
