Instagram photo by mosswingbirdThe way I love my #chocolate 100% #RAW 😋 There is lots of Information that you perhaps have read about, that dark chocolate is a healthier choice than milk chocolate and that the cocoa in chocolate can offer a wide range of health benefits. Right? What you maybe not know is that most dark chocolate today is so highly processed that it loses most of its nutrient and antioxidant strength and really provides you with nothing more than excess sugar and fat. Cacao (ka·cow) is the raw, unprocessed form of chocolate.  These untreated seeds referred to as cacao beans can be considered a superfood offering a wealth of antioxidants and essential vitamins and minerals. Yes, chocolate grows on trees 😁👉🌳 cacao beans are grown on small trees named "Theobroma cacao", which literally translates to “cacao, the food of the gods” in the Greek language.  These trees are native to Mexico, Central and South America.  Each cacao pod that emerges from the tree typically houses between 40 and 60 cacao seeds.  After careful harvesting, the pods are opened, the seeds are removed, and they undergo a natural fermentation and drying process.  After the drying process is completed in 1-2 weeks, you are left you with raw cacao beans.(see👆picture) To make the chocolate that you all know and love, these raw cacao beans are then roasted to form cocoa, which is then combined with sugar and fats until the beans are unrecognizable.  The high heat during the roasting process reduces the levels of antioxidants in the cacao. Sadly that roasting changes the molecular structure of the cocoa bean, minimizing the enzyme content and the powerful health benefits found in the unprocessed, raw cacao. Raw chocolate contains many important vitamins and minerals including:
Magnesium, and other essential minerals including calcium, sulfur, zinc, iron, copper, potassium, and manganese Polyphenols called flavonoids, with antioxidant properties Vitamins: B1, B2, B3, B5, B9, Essential heart-healthy fat: oleic acid a monounsaturated fat Protein Fiber Eat more chocolate, it makes you happy ❤️🙌
Instagram photo by nerdywhole30I'm down to the single digits here, and I'm gonna use that as an excuse to drop some truth that will probably not win me any friends... * I want to talk about eating animals. I was vegetarian for something like 12 years, and started eating meat again in 2010. I feel better and way healthier on whole30 than I think I ever did as a vegetarian - soy nuggets, tofu-everything, bagels, hummus, and peanut butter were all dietary staples. Eventually I developed a phantom digestive ailment that the one doctor I could afford couldn't diagnose (this was well before ACA [the LAW OF THE LAND!], or even before "Romneycare" took hold here in the Commonwealth). It went away without treatment, but I'm still traumatized AF from that ordeal. * Meat is medicinal in my mind, and eating it has made me healthier, but the long-time vegetarian in me still feels conflicted about eating animal protein at every. Single. Meal. There is no escaping that eating lots of meat is environmentally disastrous, no matter how grass-fed the beef is. I try to source, buy, cook, and eat meat mindfully, with full attention to and gratitude for the animal that died for my nourishment, but that doesn't ameliorate the ill effects of a meat-heavy diet. Yes, I know whole30 encourages the practice of buying the best, most ethically-raised meat (and I'm lucky, no, privileged enough to be able to do that, or close to it), but the social and environmental impact is still considerable. * It's not something I see discussed much in whole30/paleo-land, and I don't have a solution. It's a conflict. On the other side of this, I think I'll try to reintroduce meatless Monday, maybe make it vegan, and still healthful.
