- The fluffiest, no fail vegan pancakes. 🥞 ¾ cups oat flour (or plain flour) 1 tbsp cornstarch 1 tsp baking powder ¼ tsp ground cinnamon 3 tbsp maple syrup 1 tsp apple cider vinegar ½ cup soy milk (or any other dairy free milk) 2 tbsp coconut oil (or vegetable oil) Heat a dry frying pan on low heat. Mix the dry ingredients together in a large bowl. Stir in the wet ingredients until well combined and the texture is runny but thick. For your first pancake try to assess if you need to add a small amount of oil to the pan by making a little mini pancake, it should start forming bubbles after about 20-30 seconds and turn light golden on one side. Pour in about ¼ cup of the batter onto the dry pan and cook for 20-30 seconds before carefully flipping onto the other side. Cook for another 20-30 seconds until fluffy and golden. Repeat with the rest of the batter. Serve with maple syrup warm jam, mixed berries and for a yummy crunch (and a yummy super food) some buckinis. Enjoy!! 🍓🍓
