- Who says you can't eat healthy AND enjoyably with convenience while on vacation?! I just whipped together a nice little shmorgasbord (I like to add an 'h' for more fun pronunciation) of goodies for my camping trip tomorrow in about a half hour flat. Watch and learn........ ▶#1 Cookie stash for the sweet tooth. (See recent post on Easy Fast Healthy Delicious Cookies. 'Cuz they are.) ▶#2 Fresh cut veggies and grapefruit slices. (Keepin' it healthy.) ▶#3 Egg 'Muffins'. (See past post- Super easy and transportable breakfast!) ▶#4 @sietefoods Grain-free chips and some dip I just whipped up quick. (Full-fat plain unsweetened Greek yogurt + Franks Original Hot Sauce + Shredded cheese + Sea salt + Chives = Yum.) ▶#5 Waaaaatamelon. ('Cuz it's summer.) ▶#6 Bag 'o Baco. ('Cuz you always need a bag of bacon. Uncured antibiotic-free that is.) ✴✴Not Pictured: 2 bags of limes and 2 bottles of tequila. For margarita purposes. Also healthy. See recent post for recipe.) BAM- No fat will be campin' out on you with this spread!

- Confession time. I've been off track for 3 weeks. I'm working out of town for a month and staying at a friend's back where we just moved from teaching summer school. Because I'm not in my own place with my own things I've eating a lot of crap and become addicted to pop again. Although I've lost 3 pounds I don't think it's fast loss. So today I decided no more crap.. get back to healthy. First step.. no more pop. Yes the sparkling fruit juice is just as bad but it's a step in the right direction. Once this six pack is done I'm back to sparkling water and just water. I started drinking it though because the tap water is terrible here and I kept forgetting bottled water. But never fear.. the bottled water is in the fridge! Anybody else find it really easy to fall off the no sugar band wagon super easily? - Tonight was my boys birthday party so they got to pick the menu. They asked for pigs in a blanket, tater tots, mac & cheese, and watermelon. I added a spinach salad, skipped out on the carbs, and used fathead dough instead of crescent rolls to make the pigs in a blanket keto friendly. I use the same fathead recipe I use for pizza crust and just cut it into strips and wrap around the hot dogs before baking. There are quite a few different fathead recipes out there.
