- Chocolate Chip Cookie Dough Nicecream Sandwiches by @greensmoothiegourmet 🍦 What You'll Need: To make 8 bars For the Vegan Chocolate Chip Cookie Dough – makes 1/2 cup 1/2 cup cashew butter 1 tsp plant milk 1/8 cup coconut palm sugar 2 tbsp vegan butter 1/2 tsp pure vanilla paste 1/4 cup almond flour 1/4 cup vegan chocolate chips . For the Ice Cream (or “nicecream”) – makes 2 1/2 cups 4 frozen bananas 1/4 cup coconut cream 1/8 cup nut milk 1/2 tsp vanilla paste 1/2 cup chunks of homemade cookie dough . For the Bar Crust & Crumble 1 cup almond flour 1/3 cup coconut oil 2 tbsp cacao powder 2 tbsp coconut sugar pinch of salt I used this silicon mold, and only filled 8 out of 12 slots. To prep the mold, I rubbed inside with coconut oil, and dusted with flour. Too late, I realized I should have dust the bottom with cacao to prevent whitening of the chocolate crust. . How To Make: To make these bars, obviously you’d have to make the ice cream ahead of time. You can visit the original ice cream recipe here, or I am giving it to you again on this page, halved to fit into 8 mold slots… To make the cookie dough for the ice cream, blend all cookie dough ingredients, adding the flour last, a little at a time, until mixture is crumbly. Use your fingers to work the chocolate chips in if necessary. Put the mixture in an air-tight container or ziplock bag, and freeze for at least 30 minutes. To make the ice cream, add all ice cream ingredients to blender, and blend until ultra creamy. Put in a freezer-safe container with lid, or line a loaf pan with parchment paper and spoon ice cream into it, mix in chunks of cookie dough, cover with a layer of parchment and freeze mixture for at least 2 hours, or overnight. To make the bars, use a blender or processor to blend up the crumble/crust, adding the coconut oil last. Line the mold with about 1/4 inch of the mixture, keep back some to top the bars, and freeze for 30 minutes. Spoon ice cream into slots, filling to the top and sprinkle some crumble/crust on top. - Raw vegan cakes enjoyed yesterday arvo 💕 Right before everything went downhill and I spent the rest of my night in a hospital bed 😂 I'm home now and everything should improve for me in the next few days, but it was definitely a bit of a scare! One thing is for sure, I really don't plan to spend any more time in emergency 😳 So now it's complete rest from everything for a week or so... Not ideal with my lifestyle, but health comes first! Might be nice to lie in bed and catch up on all the tv shows I've missed 💕

- Have you ever been on a cooking roll, where everything you make is to die for. Or let's just say really, really good. I'm on that roll!!! It's so weird how cooking is like painting or playing the piano . If you stop practicing, you loose it! So keep practicing and you will start coming up with all types of yumminess. Here is my quinoa burger and organic kosher pickles with brown sweet tomatoes and a nice big slice of Hass on top of that...with a drizzle of @beetchup. - I hear it's going to be hot this weekend! I thought I'd better prepare with some #dairyfreeicecream- double chocolate, nutty monkey​. The flavor was inspired by the three brown bananas in the fridge. #zerowastekitchen Gather: 3 very ripe bananas 1/4 cup honey or other sweetener, adjust to taste 2.5 cups full fat coconut milk Scrapings of one vanilla bean pod or 1 teaspoon vanilla extract 1 tablespoon chia seeds Pinch sea salt Blend or process all of the above until super smooth. Adjust sweetness to your taste. Add another pinch of salt if you like it. Churn in an ice cream maker per the instructions or until you see that it's clearly like soft serve or thicker. Taste. Yum! Stir in the chunks below and mix thoroughly. 1/4 cup chopped walnuts (almonds would be nice too) 2 tablespoons cacao nibs 3 tablespoons chopped unsweetened chocolate or chocolate chips Enjoy immediately or defrost for 15 minutes if you freeze it. Of course it is all vegan and organic! Let it freeze for 24 hours and wow it is amazing, colors are a little off (this was right after mixing last night before freezing) so the kitchen lights made it look more yellow and not a great green from the spinach!
