- This is a... burrito? Fajita? Either way. I made some veggies (onions and bell peppers) with a fajita mix. I don't remember all the spices, but I made a bunch so I can have it on hand. Then covered them with black beans, avocado, salsa, cilantro, and spinach. I could barely close the tortilla and it was quite messy. But it was yummy!! _ It's also an easy meal if you have a mixed household. The omnivores can add meat or whatever. - Scrambled tofu aka scrambled eggsless breakfast. For two large two servings: 7 oz of extra firm tofu, one large onion, 1 medium carrot, 4 tablespoons olive oil, 1 tablespoon Hampton Creek Vegan mayo, 1 teaspoon curry powder, 1/2 teaspoon fine pink sea salt, 1/2 teaspoon hot sauce, and pinch black pepper. Saute chopped onion, finely shredded carrot with oil on med heat for 2 to 3 min. Crumle tofu, using your hands. Add to the pan, mix in salt, hot sauce, mayo and pepper. Cook for 4-5 more min, constantly stiiring. Done. You can eat it on sandwiches or inside the wraps with more veggies ( sweet bell peppers, tomatoes, shredded beets). Or serve as is for breakfast with ketchup instead traditional eggs. Brown rice is cooked in flavorful salsa with garlic salt, a bay leaf and cumin. Canned black beans make this recipe very convenient. And my favorite part is a squeeze of lime juice and a dollop of sour cream on top.
