Sautee onions, garlic, ginger in a little olive oil. 2. Add all the chopped veggies ( except butternut and lentils) and stir-fry in spices. If the pot is too dry add a little water. 4. When veggies are tender add in roasted butternut , lentils, 2 cups vegetable stock and coconut milk and let it simmer until lentils are cooked. 5. Pour into blender and blend until desired consistency.... which is obviously smooth AF.😏 . . Sprinkle with a little crushed hemp seeds and black pepper. ( black pepper aids in the absorption of tumeric)
