For the dough I used Schaer’s gluten free pizza dough recipe: (https://www.schaer.com/de-de/r/pizza-oder-brot). You can freely choose which topics you would like for your pizzas, as a base I used tomato sauce, vegan pesto sauce (recipe on our blog) and hummus. For the topping I used red and orange bell pepper, zucchini, basil and spices. Form small pizzas and put it in the oven for about 20min on around 200 degrees. - Roast Cauliflower with Hummus and Lentils 1 cup green lentils 1 large cauliflower olive oil curry powder whole cumin 1 cup hummus (store bought is fine) juice of 2 lemons Toasted almonds Toasted sunflower seeds mint leaves Rinse the lentils and bring them to a boil in a pot with plenty of water and cook until the lentils are soft. Strain the lentils and season with a few splashes of cider vinegar, olive oil and some salt. This step can be done ahead of time. Cut the cauliflower crosswise into slices about ½ inch thick. Drizzle a sheet pan with a little olive oil, spread the cauliflower onto the pan. Sprinkle some curry powder and cumin over the cauliflower then drizzle some more olive oil over everything. Place the sheet pan in a preheated 450°F oven until the cauliflower is lightly browned on the bottom about 10 minutes. Flip the cauliflower over and return the pan to the oven until the cauliflower is cooked, about 10 more minutes. Meanwhile mix the hummus and lemon juice together and spread it in the middle of 4 plates. Divide the cauliflower amongst the plates, spoon some lentils, almonds and sunflower seeds over the cauliflower, then wash and tear the mint leaves over top #roasted #cauliflower #hummus #lentils
