- LADIES NIGHT And by ladies night I mean me, this pretty pink pizza and a glass of wine ๐Ÿท .. @barbell.dadbod is meeting up with some friends tonight and I thought this would be a good opportunity to try out this pizza Iโ€™ve been dreaming of โ˜๏ธ .. I LOVE Pizza, I mean I really really love pizza ๐Ÿ• and having issues with gluten and dairy makes it hard to enjoy, but I still do ๐Ÿ˜ฌ I will still get a gluten free pizza but I have yet to find a dairy free cheese I like so Iโ€™ll get it with cows cheese and pay the price afterwards ๐Ÿ˜… .. - Pomegranate & sesame chicken with coconut ginger brown rice๐Ÿ› . . Ingredients 2 chicken breasts, cubed 3 TB flour 2 cups broccoli florets 1 medium onion, small diced 1 inch ginger, grated 3 cups cooked brown rice 1 garlic clove, finely chopped 1/4 cup unsweetened coconut, toasted 1/2 cup pomegranate juice 1/4 cup soy sauce 2 TB sambal chili paste 1 TB sesame oil 1 tsp hot sesame oil 2 TB brown sugar 1 TB rice vinegar . Procedure Coat chicken pieces with flour In a large skillet heat canola oil over medium high heat and brown the chicken in batches, being careful not to over crowd the pan. Place cooked chicken on a paper towel lined plate to absorb any extra grease. While your chicken is cooking saute your onions in a separate pan with a little EVOO, ginger, and garlic. Cook until soft, add the rice and stir until incorporated. Set aside. Once the chicken is done drain the pan of excess oil and sear the broccoli florets. Combine last 7 ingredients. Add the chicken to the broccoli and pour sauce over everything. Continue cooking on high until the sauce reduces slightly, about 5 minutes.
