- Quinoa breakfast bowl ๐Ÿ‘Œ packed with flavor, protein and all kinds of goodness!! A great quick and easy #mealprep for your mornings too! . . . What you need - 2cups coconut milk, 1 cup quinoa (rinsed and drained) 2 big Tbsp almond butter, 1-2 Tbsp pure maple syrup or raw honey (sweetened to your personal preference) chopped almonds, toasted coconut flakes, splash of coconut or almond milk . . . In a large saucepan, stir together quinoa and coconut milk. Bring to boil over medium high heat, reduce to low, simmer between 15-20 minutes until liquid has been absorbed and quinoa is tender. Stir is almond butter and maple syrup and adjust for sweetness. Add toasted coconut flakes and chopped almonds and a splash of coconut or almond milk!! ENJOY!!
