Instagram photo by sandyshamsIf you want an easy meal that's gluten free, can be served for breakfast, lunch or dinner, here's a quinoa crusted quiche.
For a 10" quiche pan
Preheat oven to 375
2 1/2 -3 cups cooked cooled quinoa
1 whole egg
Season cooked quinoa with turmeric, black pepper, salt and anything else you want to add.
Add the egg, mix well.
Mixture will be mushy and wet.
Spray or oil your pan then place quinoa mixture in the pan and press against the bottom and up the sides as evenly as possible.
Bake at 375 for 18-20 min until firm and slightly browning.
I added chopped leftover ham and sweet potato from our Sunday dinner, broccoli ( no need to precook if you just use the tender and flowering parts), sautéed onion & sliced shitake mushrooms, spinach, fresh dill, grated cheddar& feta cheese.
Mix together hold the feta to sprinkle on top. You'll need about 4-5 cups of filling for a standard 10" pan.
Put filling in the quinoa crust.
Make a custard as follows:
1/2 cup cream or milk
Season with pepper, chilli flakes, garlic and any other spices you like.
Add salt if you don't have salty goods in your filling. Ham and feta are salty and may provide enough salt so season carefully.
Pour this mixture over the filling . It should come about 1/2 inch from the top of the pan if not add another egg mixed with a little milk.
Do t overfill as it will puff as it bakes.
Sprinkle feta on top.
Bake for 35-40 min at 375 or until set. Avoid overcooking.
