- Tonight’s dinner and tomorrow’s leftovers: carbonara! So this doesn’t look very appetising but I promise you it was delicious!!! I had mine with cauliflower rice to save points but you can serve it with spaghetti if you like. I fried 1 red onion, 1 leek, 2 bacon medallions and seasoning including salt, pepper and garlic. For the carbonara sauce I use 1tsp low fat butter and melt in a sauce pan. Once melted I add 2tsp of flour and stir it all together. Then I add 1 quarter of a pint of skimmed milk and stir constantly. Once all combined, I add 100g of quark and carry on stirring. Finally I add 20g of Aldi’s low fat mature cheddar cheese and stir until the sauce bubbles. I then add 50g frozen peas to the bacon and leek mixture, cook for 5mins further and then combine the two mixtures and serve. Total smart points: 9 points.
