- mini gnocchi w pesto, red peppers, @followyourheart parmesan and some oven roasted asparagus for early dinner🍴(sorry for weird photo quality idk what I did and I was too hungry to fix it lol) _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ today I had the pleasure of finding out that 1) my doctor I've had for 7 years is vegan and 2) this really sweet nurse who works w him is transitioning to veganism after watching #whatthehealth and learning how bad animal products are for you. She's already lost so much weight and cut half of her diabetes meds just bc of the diet changes she's made so far 😊 she and I talked for a while and it was so nice to see that people in the older generation can come to the same conclusion as the stereotypical 20 something vegan & can benefit tons health wise from doing so. I also heard that a family friend is leaning towards veganism too and it really gives you hope that the world is changing 🌏whether it's refusing to support animal agriculture, living a healthier lifestyle, or doing your part to significantly reduce your carbon footprint, there are so many good reasons to go vegan & I'm so happy people (and MEDICAL PROFESSIONALS!!) are making the connection 🌻
