- I slid off the rails haaaard in the last week or so. Easter candy. Wine. Beer. Bread. Cheese. A combination therein within the span of a few short hours. These next three weeks are going to be brutal, so I am mashing the keypad for a reset... now. I place the duck prosciutto on top after I pull the frittata out of the oven. - What do you do when you have veggies in the fridge that need to be used stat?! Make a frittata! This was so good, so easy, will last me a couple of meals, and I didn't waste any food! 💃🏻🎉 . . 1. Heat 2 tbsp ghee or olive oil in a cast iron skillet on the stove. Preheat oven to 400. 2. Add veggies or choice and cook until softened. I used onion, kale, and spinach. 3. Whisk 6 eggs in a bowl and add seasonings. I used pink sea salt, pepper, turmeric, garlic powder, & cayenne powder. 4. Pour egg mixture over veggies in the skillet and cook on the stove for 5-7 minutes, or until the sides start to cook. Add tomatoes & crushed red pepper to the top! 5. Place in the oven and cook for 15 or so minutes. 6. Cut into thirds or fourths and top with avocado.
