- In other sweet potato news 😜🍠...eating this yummy little dish tonight! I shared this recipe a little while ago, but I figured I would do it again...because it's just that good 😋🙌. 3 mini eggplants cut in rounds and roasted for 20-30 minutes (at 425 convection or 400 regular) with whole cloves of garlic in their skins (coated with olive oil, salt and pepper 😉)...then pop the garlic out of their skins (garlic is bae 😍). Then add 1/2 a pint of cherry tomatoes and let them roast for 10 minutes 🍅 (drizzle the mixture with balsamic vinegar at the end ❤️). Separately, I sauteed 1 sweet potato (cut in chunks) and 1 can of chickpeas (drained) in 2 tablespoons of avocado oil and sprinkled it with cinnamon and salt 👅👀. - This doesn't necessarily look like a happy thing but it made me feel exactly that, happy. It's a tomato and eggplant galette with goat cheese and rosemary and I know I didn't quite get the pleats down and it's certainly a little over roasted, but it still felt friendly and casual, it smelled and looked of fresh goods, and you know people have been making and sharing these simple parcels for centuries, probably with wine bottles with no labels, so they've stood the test of time. ( I better look that up, for all I know that swearing blonde chef guy made these up last March) I think you could have a really good conversation over a galette. I'm going to try again tomorrow with a couple of fruit ones and see what happens. This recipe was from Melissa Clark's new cookbook - Dinner. The crust is half all purpose and then a half of either rye or whole wheat. I used both and it came out a little dry in the rolling but delicious in the bake. I love rye.
