- These spring onions from a 🛣roadside 🚜farm stand by the water🌊 are spoiling me. The intense flavor is like no onion I have ever purchased at a retail market. The tips look a bit like asparagus. Top of the stem is hollow and bottom half looks like a big scallion. These are very young onions, harvested before the bulb has had a chance to swell. Both the long, slender green tops and the small white bulb are edible, and are good either raw or cooked. They have a similar flavour to onions, but are much milder. Can't wait to seek these out at a local farmer's market!!👍🏻

- Full transparency time. I am not going to complete this round of Whole 30. My husband and I are going away for our anniversary next week. This will be our first trip, just the two of us, since I was pregnant. After a lot of consideration, I've decided to keep going with Whole 30 up until we leave, treating this as a reset, but on vacation, should I choose to have a glass of wine or split a slice of cake, I don't want to feel guilty. This would have been my 4th #whole30 round, and as much as I wanted to finish it, this process is about finding #foodfreedomforever, and for me, exercising self control on vacation is part of that. I am planning a fresh round after we return, which I'm of course excited for! . . . - Roasted vegetable chicken piccata/primavera (that name needs some serious work 🙃). The recipe is a little more involved than some of my others but it's absolutely delicious __ #recipe: Vegetables - preheat oven to 400 degrees. Coat chopped vegetables (I used cauliflower, sprouts, and asparagus) with 1 tbsp olive oil and sprinkle with salt and pepper. Roast for 30 minutes. Chicken - create a dry rub with 1/2 cup flour, 1 tsp salt, 1 tsp pepper, 1 tsp garlic powder, and 1 tsp onion powder. Cut the chicken in strips and coat with dry rub. Heat 1 tbsp olive oil in a shallow pan and brown (about 3-4 minutes a side). Pasta - I used fresh angel hair (🙌🏼) and cooked it in chicken broth per directions (1-2 minutes usually). Remove pasta and set aside. Save the broth for the sauce. Sauce - remove chicken from pan and set aside. Add 1 tbsp olive oil to hot pan and 1 tbsp flour to create a roux. Ladle the starchy chicken broth (from the pasta - abut 2 cups) into the pan. Bring to a boil and add juice from one lemon. Combine chicken, vegetables (add one jar of artichoke hearts - drained) and pasta into and pan with the sauce and mix thoroughly. Enjoy!

- A pan of roasted veggies is currently in the oven cooking to perfection. I'm obsessed with roasted veggies because of how simple it is to make and how filling it can be. I vary up my veggies: sometimes it's a carefully planned selection of produce and other times it's a hodgepodge of what's left in the fridge. Either way, they're always delicious! In case you're curious, tonight I'm enjoying a mix of bell peppers, zucchini, eggplant, and red onion. I've used a salt free seasoning blend from Trader Joe's, as well as some fresh chopped garlic, and paprika.
