- Since last week I've done few changes to this chocolate and now it is a part of our menu: - Alunga 41% milk used for peanut crunch filling; - slightly more acidity to passion fruit; - Cacao Barry Mexique 66% dark used for the shell. It's been infused with habanero chile instead of arbol, which work better with this chocolate flavor profile and fantastic hot sensation in the end. Chocolates require enormous amount of patience, time, skill and creativity. I do not accept mediocrity and do not compromise my own standards, such as strong flavors, interesting texture, visual appearance and thin shiny crunchy shells.
