Vegetarian butternut squash quinoa chili 😋
Tasty and spicy 🙊
Here's the recipe (it made 2kg of final product) :
500 g butternut squash
1 clove garlic
1 red onion
1 yellow onion
3 sweet potatoes
3 chili peppers
1 can of red kidney beans
200g dry quinoa
1/2 liter vegetable broth
10 ml olive oil
1 lime (juice)
2 tbsp maple syrup
Paprika, pili-pili, pepper, salt, cumin, coriander.
Chop onions, garlic & chili peppers ; cube butternut squash, sweet potatoes & tomatoes.
Heat the pan with olive oil, add onions and garlic and let cook until brown.
Then add butternut squash, sweet potatoes, and chili peppers.
Stir, let it cook a bit, then add tomatoes, beans and finally the quinoa. Add spices to taste.
Stir then add broth, wait until it is boiling, then reduce heat and cover.
Let it simmer for 20-30 minutes until quinoa is cooked.
Finally, add the lime juice and the maple syrup 😁
You can top it with fresh coriander, or guacamole 👌
